Instructions

  • In a bowl, beat the 3 large eggs until well mixed. Season with salt and pepper to taste.
  • In a skillet over medium heat, melt the 1 tablespoon of butter. Add the 1/4 cup diced onion and 1/4 cup diced green bell pepper. Cook until softened, about 3 minutes.
  • Add the 1/4 cup diced ham, 1/4 cup cooked crumbled bacon, and 1/4 cup cooked sausage to the skillet. Cook for an additional 2-3 minutes, stirring occasionally.
  • Pour the beaten eggs over the meat and vegetable mixture in the skillet. Allow the eggs to set around the edges, then gently lift the edges with a spatula, tilting the skillet to allow the uncooked eggs to flow to the bottom.
  • Once the omelette is mostly set but still slightly runny on top, sprinkle the 1/4 cup shredded cheddar cheese over one half of the omelette.
  • Using a spatula, carefully fold the omelette in half to cover the cheese. Cook for another 1-2 minutes until the cheese is melted and the omelette is cooked through.
  • Slide the omelette onto a plate and serve hot.
