Ingredients
- 2 cups all-purpose flour
- 2 tbsp granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 1/2 cups buttermilk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- Butter or oil for cooking
Instructions
- In a large bowl, whisk together 2 cups of flour, 2 tbsp sugar, 2 tsp baking powder, 1 tsp baking soda, and 1/2 tsp salt.
- In another bowl, whisk together 2 1/2 cups buttermilk, 2 large eggs, 1/4 cup melted butter, and 1 tsp vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. It's okay if the batter is a little lumpy.
- Preheat a griddle or non-stick skillet over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Repeat with the remaining batter, greasing the griddle as needed.
- Serve the pancakes warm with your favorite toppings such as maple syrup, fresh fruit, or whipped cream.
