  • 1 tsp Sichuan peppercorns, toasted and ground

  • 1/4 cup roasted peanuts, chopped

  • 1/4 cup roasted peanuts, chopped
  • 1 tbsp sesame oil

Instructions

  • Cook the fresh Chinese wheat noodles according to package instructions. Drain and set aside.
  • In a large skillet, cook 1/2 lb of ground pork over medium heat until browned and cooked through, about 5-7 minutes.
  • Add 2 cloves of minced garlic, 1 tbsp of minced ginger, and half of the sliced green onions to the skillet with the cooked pork. Cook for 1-2 minutes until fragrant.
  • In a small bowl, whisk together 1/4 cup of chicken broth, 2 tbsp of soy sauce, 1 tbsp of Chinese black vinegar, 1 tbsp of chili oil, 1 tsp of ground Sichuan peppercorns, and 1 tsp of sugar.
  • Pour the sauce mixture into the skillet with the pork and aromatics. Stir to combine and simmer for 2-3 minutes.
  • Add the cooked noodles to the skillet and toss to coat the noodles in the sauce.
  • Divide the noodles among serving bowls and top with the remaining sliced green onions, chopped roasted peanuts, and a drizzle of sesame oil.
