Ingredients
- 8 oz fresh Chinese wheat noodles
- 1/2 lb ground pork
- 2 cloves garlic, minced
- 2 green onions, thinly sliced
- 1/4 cup chicken broth
- 2 tbsp soy sauce
- 2 tbsp Chinese black vinegar
- 2 tbsp sesame paste
- 2 tbsp chili oil
- 1 tbsp Sichuan peppercorns, toasted and ground
- 1 tsp sugar
- 1/4 cup roasted peanuts, chopped
- 1 tbsp vegetable oil
Instructions
- Cook the fresh Chinese wheat noodles according to package instructions. Drain and set aside.
- In a small bowl, mix together the soy sauce, Chinese black vinegar, sesame paste, chili oil, ground Sichuan peppercorns, and sugar to make the spicy sauce. Set aside.
- Heat the vegetable oil in a large skillet over medium heat. Add the ground pork and cook until browned and cooked through, breaking it up with a spoon as it cooks.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Pour in the chicken broth and bring to a simmer. Cook for 2-3 minutes until the liquid reduces slightly.
- Add the cooked noodles to the skillet and toss to combine with the pork and garlic mixture.
- Pour the prepared spicy sauce over the noodles and toss to coat evenly. If the sauce is too thick, you can add a little more chicken broth to loosen it up.
- Divide the noodles among serving bowls and garnish with sliced green onions and chopped roasted peanuts.
