Instructions

  • Place the chicken breasts in the bottom of the crock pot.
  • Sprinkle the taco seasoning over the chicken.
  • Add the chicken broth, salsa, chopped onion, and sliced bell pepper to the crock pot.
  • Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is tender and easily shreds with a fork.
  • Once the chicken is cooked, use two forks to shred it directly in the crock pot and mix it with the cooking liquid and vegetables.
  • Warm the tortillas according to package instructions.
  • Assemble the tacos by placing a spoonful of the chicken mixture onto each tortilla and topping with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and avocado slices.
  • Serve with lime wedges on the side for squeezing over the tacos.
