  • 2 tablespoons of cornstarch
  • 1 tablespoon of sesame oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of broccoli florets
  • 1 cup of snap peas
  • 3 green onions, sliced
  • 2 cloves of garlic, minced
  • 1 tablespoon of grated ginger
  • Cooked rice or noodles, for serving
  • Sesame seeds and sliced green onions, for garnish

Instructions

  • While the tofu is baking, heat the sesame oil in a large skillet or wok over medium-high heat.
  • Add the red and yellow bell peppers, broccoli, and snap peas to the skillet and stir-fry for 5-6 minutes, or until the vegetables are tender-crisp.
  • Add the green onions, garlic, and ginger to the skillet and stir-fry for an additional 2 minutes.
  • Pour the remaining 1/4 cup of teriyaki sauce over the stir-fried vegetables and toss to coat evenly.
