Ingredients
- 1 block of firm tofu, pressed and cut into cubes
- 1/2 cup of teriyaki sauce
- 2 tablespoons of cornstarch
- 1 tablespoon of sesame oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of snap peas
- 3 green onions, sliced
- 2 cloves of garlic, minced
- 1 tablespoon of grated ginger
- Cooked rice or noodles, for serving
- Sesame seeds and sliced green onions, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the tofu cubes with 1/4 cup of teriyaki sauce until well coated.
- Sprinkle the cornstarch over the tofu and toss to coat evenly.
- Place the tofu on a parchment-lined baking sheet and bake for 25-30 minutes, or until crispy and golden brown.
- While the tofu is baking, heat the sesame oil in a large skillet or wok over medium-high heat.
- Add the red and yellow bell peppers, broccoli, and snap peas to the skillet and stir-fry for 5-6 minutes, or until the vegetables are tender-crisp.
- Add the green onions, garlic, and ginger to the skillet and stir-fry for an additional 2 minutes.
- Pour the remaining 1/4 cup of teriyaki sauce over the stir-fried vegetables and toss to coat evenly.
- Serve the crispy baked teriyaki tofu over cooked rice or noodles, topped with the stir-fried vegetables.
- Garnish with sesame seeds and sliced green onions before serving. Enjoy!
