Instructions

  • Remove the stems from the mushrooms and chop them finely.
  • In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened, about 3 minutes.
  • Add the chopped mushroom stems and spinach to the skillet, and cook until the spinach is wilted, about 2 minutes.
  • In a bowl, mix the cream cheese, Parmesan cheese, salt, and black pepper. Add the cooked spinach mixture to the bowl and stir to combine.
  • Stuff each mushroom cap with the spinach and cream cheese mixture, and place them on a baking sheet.
  • Sprinkle breadcrumbs over the stuffed mushrooms.
  • Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
