Instructions

  • In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and cook until softened, about 5 minutes.
  • Sprinkle the flour over the onion and garlic, and stir to combine. Cook for an additional 2 minutes to remove the raw flour taste.
  • Slowly pour in the chicken or vegetable broth, stirring constantly to prevent lumps from forming.
  • Add the diced potatoes and dried thyme to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
  • Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, you can use a regular blender in batches, being careful not to overfill and to vent the steam.
  • Stir in the heavy cream and season with salt and pepper to taste. Let the soup simmer for an additional 5 minutes to heat through.
  • Ladle the creamy potato soup into bowls and garnish with chopped chives. Serve hot and enjoy!
