Ingredients
- 1 pound ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 4 cups potatoes, peeled and diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- In a large pot, brown 1 pound of ground beef over medium heat. Drain any excess fat.
- Add the diced onion and minced garlic to the pot and cook until the onion is translucent.
- Pour in 4 cups of chicken broth and add the diced potatoes, carrots, and celery to the pot.
- Stir in 1 teaspoon of dried thyme and 1 teaspoon of dried rosemary. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the vegetables are tender.
- Stir in 1 cup of heavy cream and let the soup simmer for an additional 5 minutes.
- Taste and adjust the seasoning if needed. If the soup is too thick, add more chicken broth to reach your desired consistency.
- Garnish with chopped fresh parsley before serving.
