Instructions

  • In a large pot, brown 1 pound of ground beef over medium heat. Drain any excess fat.
  • Add the diced onion and minced garlic to the pot and cook until the onion is translucent.
  • Pour in 4 cups of chicken broth and add the diced potatoes, carrots, and celery to the pot.
  • Stir in 1 teaspoon of dried thyme and 1 teaspoon of dried rosemary. Season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the vegetables are tender.
  • Stir in 1 cup of heavy cream and let the soup simmer for an additional 5 minutes.
