Creamy Parmesan Mushroom Risotto

Ingredients
- 1 1/2 cups Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1/4 cup heavy cream
- 2 tbsp butter
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley
Instructions
- In a medium saucepan, heat the chicken or vegetable broth over low heat and keep it warm.
- In a large skillet, heat 1 tbsp of olive oil and 1 tbsp of butter over medium heat. Add the chopped onion and cook until translucent, about 3 minutes.
- Add the minced garlic and Arborio rice to the skillet, stirring constantly for 2 minutes until the rice is well coated with the oil and butter.
- Pour in the white wine and cook, stirring constantly, until the wine is absorbed by the rice.
- Add a ladleful of warm broth to the rice and cook, stirring constantly, until the broth is absorbed. Repeat this process, adding one ladleful of broth at a time and stirring constantly, until the rice is creamy and al dente, about 20 minutes.
- In a separate skillet, heat the remaining 1 tbsp of olive oil over medium heat. Add the sliced mushrooms and cook until they are golden brown and all the liquid has evaporated, about 5-7 minutes. Season with salt and pepper to taste.
- Stir the cooked mushrooms, grated Parmesan cheese, and heavy cream into the risotto. Cook for an additional 2-3 minutes until the cheese is melted and the risotto is creamy.
- Remove the risotto from the heat and stir in the remaining 1 tbsp of butter. Season with salt and pepper to taste.
- Garnish with chopped fresh parsley before serving. Enjoy!
