Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup heavy cream
- 2 tablespoons capers, drained
- 2 tablespoons chopped fresh parsley
Instructions
- Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness. Season with salt and pepper.
- Dredge the chicken breasts in the flour, shaking off any excess.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until golden brown and cooked through, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Whisk in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 2 minutes.
- Stir in the heavy cream and capers. Simmer for an additional 2 minutes, until the sauce has slightly thickened.
- Return the chicken to the skillet and simmer for 2-3 minutes, until the chicken is heated through and the sauce has thickened to your desired consistency.
- Garnish with chopped parsley and serve hot. Enjoy!
