  • In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until golden brown and cooked through, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  • In the same skillet, melt the butter over medium heat. Whisk in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 2 minutes.
  • Stir in the heavy cream and capers. Simmer for an additional 2 minutes, until the sauce has slightly thickened.
  • Return the chicken to the skillet and simmer for 2-3 minutes, until the chicken is heated through and the sauce has thickened to your desired consistency.
