Ingredients
- 8 oz of fettuccine pasta
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 4 cloves of garlic, minced
- 2 cups of fresh spinach
- 1 cup of heavy cream
- 1/2 cup of grated parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the fettuccine pasta according to package instructions. Drain and set aside.
- Season the chicken breasts with salt and pepper. Heat the olive oil in a grill pan over medium-high heat. Grill the chicken for 6-7 minutes on each side, or until cooked through. Remove from the pan and let it rest for a few minutes before slicing into strips.
- In the same pan, add the minced garlic and sauté for 1-2 minutes until fragrant. Add the fresh spinach and cook until wilted.
- Pour in the heavy cream and bring to a simmer. Stir in the grated parmesan cheese and let it cook for 2-3 minutes until the sauce thickens.
