Instructions

  • Add the diced chicken and cook until no longer pink, about 5 minutes.
  • Stir in the diced carrots, celery, onion, and minced garlic. Cook for an additional 5 minutes, until the vegetables begin to soften.
  • Sprinkle 2 tablespoons of all-purpose flour over the chicken and vegetables, stirring to coat evenly. Cook for 1-2 minutes to remove the raw flour taste.
  • Pour in 6 cups of chicken broth, stirring to combine. Add 1 teaspoon of dried thyme and 1/2 teaspoon of dried rosemary. Season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce the heat to low and simmer for 15 minutes.
  • Stir in 1 cup of long grain white rice and continue to simmer for an additional 15 minutes, or until the rice is cooked through and the soup has thickened.
  • Pour in 1 cup of heavy cream, stirring to combine. Allow the soup to heat through for 5 minutes.
  • Taste and adjust seasoning if necessary.
