- 1 lb boneless, skinless chicken breasts, diced
- 1 cup carrots, diced
- 1 cup celery, diced

- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 cup long grain white rice
- 1 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- In a large pot, melt 2 tablespoons of butter over medium heat.
- Add the diced chicken and cook until no longer pink, about 5 minutes.
- Stir in the diced carrots, celery, onion, and minced garlic. Cook for an additional 5 minutes, until the vegetables begin to soften.
- Sprinkle 2 tablespoons of all-purpose flour over the chicken and vegetables, stirring to coat evenly. Cook for 1-2 minutes to remove the raw flour taste.
- Pour in 6 cups of chicken broth, stirring to combine. Add 1 teaspoon of dried thyme and 1/2 teaspoon of dried rosemary. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat to low and simmer for 15 minutes.
- Stir in 1 cup of long grain white rice and continue to simmer for an additional 15 minutes, or until the rice is cooked through and the soup has thickened.
- Pour in 1 cup of heavy cream, stirring to combine. Allow the soup to heat through for 5 minutes.
- Taste and adjust seasoning if necessary.
