Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 small chopped onion and 2 cloves of minced garlic. Cook until the onion is soft and translucent, about 5 minutes.
  • Add 4 cups of broccoli florets and 4 cups of chicken or vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the broccoli is tender.
  • Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth. Return the soup to the pot.
