Instructions

  • In a separate bowl, whisk together 1 1/4 cups of milk, 1 egg, and 3 tablespoons of melted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • In another bowl, mix together 4 ounces of softened cream cheese, 2 tablespoons of powdered sugar, and 1 teaspoon of vanilla extract until smooth.
  • Heat a lightly oiled griddle or frying pan over medium-high heat.
  • Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  • When bubbles start to form on the surface of the pancake, spoon about 2 tablespoons of the cream cheese mixture onto the center of the pancake.
