Ingredients
- 5 pounds live crawfish
- 6 quarts water
- 1 cup salt
- 1/2 cup Cajun seasoning
- 2 lemons, halved
- 1 head garlic, halved
- 1 cup unsalted butter
- 6 cloves garlic, minced
- 2 tablespoons hot sauce
- 1 tablespoon paprika
- 1 tablespoon cayenne pepper
- 1 tablespoon black pepper
- 1 tablespoon dried thyme
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 1 tablespoon onion powder
- 1 tablespoon Worcestershire sauce
- 1 tablespoon lemon juice
- 1/4 cup chopped fresh parsley
Instructions
- In a large pot, bring 6 quarts of water to a boil. Add 1 cup of salt, Cajun seasoning, halved lemons, and halved head of garlic.
- Add live crawfish to the pot and boil for 5 minutes. Turn off the heat and let the crawfish soak for 20 minutes.
- In a small saucepan, melt unsalted butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Stir in hot sauce, paprika, cayenne pepper, black pepper, dried thyme, dried oregano, dried basil, onion powder, Worcestershire sauce, and lemon juice. Cook for 2 minutes, then remove from heat.
- Once the crawfish have soaked, drain them and transfer to a large serving platter. Sprinkle with chopped fresh parsley.
- Pour the spicy garlic butter sauce over the crawfish and toss to coat evenly.
- Serve the spicy garlic butter crawfish boil hot, with additional sauce on the side for dipping.
