Created by: Howcan Team
Ingredients
- 8 large eggs
- 1 pound lump crabmeat
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon Old Bay seasoning
- 1/2 teaspoon cayenne pepper
- 1/2 cup unsalted butter
- 3 large egg yolks
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 English muffins, split and toasted
- 2 tablespoons chopped fresh parsley
Instructions
- In a medium bowl, mix together the lump crabmeat, mayonnaise, Dijon mustard, Old Bay seasoning, and cayenne pepper. Set aside.
- Fill a large saucepan with 2-3 inches of water and bring to a gentle simmer over medium heat.
- In a heatproof bowl, whisk together the egg yolks, lemon juice, salt, and black pepper. Place the bowl over the simmering water and whisk constantly until the mixture thickens, about 3-4 minutes.
- Remove the bowl from the heat and slowly drizzle in the melted butter while whisking continuously until the sauce is smooth and thick. Stir in additional cayenne pepper to taste for a spicy hollandaise sauce. Keep warm.
- Poach the eggs in the simmering water for 3-4 minutes, until the whites are set but the yolks are still runny. Remove with a slotted spoon and drain on paper towels.
- To assemble, place the toasted English muffin halves on serving plates. Top each half with a portion of the crab mixture, followed by a poached egg. Spoon the spicy hollandaise sauce over the eggs and garnish with chopped parsley. Serve immediately.
