Instructions

  • In a medium saucepan, bring 1 1/2 cups of vegetable broth to a boil.
  • Stir in 1 cup of couscous, cover the saucepan, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  • In a large bowl, combine the cooked couscous, cherry tomatoes, cucumber, Kalamata olives, red onion, and parsley.
  • In a small bowl, whisk together 2 tablespoons of extra virgin olive oil, 2 tablespoons of lemon juice, and 1 teaspoon of dried oregano. Season with salt and pepper to taste.
  • Pour the dressing over the couscous mixture and toss to combine.
  • Divide the couscous mixture into 4 bowls, and top each with crumbled feta cheese.
