Mediterranean Couscous Bowl

Ingredients
- 1 cup couscous
- 1 1/2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1/2 English cucumber, diced
- 1/4 cup Kalamata olives, pitted and chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring 1 1/2 cups of vegetable broth to a boil.
- Stir in 1 cup of couscous, cover the saucepan, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a large bowl, combine the cooked couscous, cherry tomatoes, cucumber, Kalamata olives, red onion, and parsley.
- In a small bowl, whisk together 2 tablespoons of extra virgin olive oil, 2 tablespoons of lemon juice, and 1 teaspoon of dried oregano. Season with salt and pepper to taste.
- Pour the dressing over the couscous mixture and toss to combine.
- Divide the couscous mixture into 4 bowls, and top each with crumbled feta cheese.
- Serve immediately and enjoy!
