  • 1/2 cup cotton candy, finely crushed

Instructions

  • In a large bowl, whisk together 1 1/2 cups of flour, 3 1/2 teaspoons of baking powder, 1 teaspoon of salt, and 2 tablespoons of granulated sugar.
  • In a separate bowl, mix 1 1/4 cups of milk, 1 egg, 3 tablespoons of melted butter, and 1/2 teaspoon of vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Divide the batter evenly into two separate bowls.
  • Add a few drops of pink food coloring to one bowl and a few drops of blue food coloring to the other bowl. Mix until the batter is evenly colored.
  • Gently fold in 1/4 cup of finely crushed cotton candy into each bowl of batter.
  • Heat a non-stick griddle or skillet over medium heat and lightly grease with butter or cooking spray.
  • Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
  • Serve the cotton candy pancakes with extra cotton candy on top for garnish, if desired. Enjoy!
