- 4 eggs

- 1 tablespoon olive oil
Instructions
- In a bowl, beat 4 eggs until well combined.
- Add 1/2 cup of cottage cheese to the beaten eggs and mix well.
- Stir in 1/4 cup each of chopped onion, bell pepper, and tomato into the egg mixture.
- Season the mixture with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper, and stir to combine.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Pour the egg mixture into the skillet and cook for 3-4 minutes, or until the edges start to set.
- Using a spatula, gently lift the edges of the omelette to allow the uncooked eggs to flow underneath.
- Continue cooking for another 2-3 minutes, or until the omelette is set but still slightly moist on top.
- Fold the omelette in half and cook for an additional 1-2 minutes, or until the cheese is melted and the omelette is cooked through.
- Slide the omelette onto a plate, cut in half, and serve hot.
