Ingredients
- 2 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and shredded chicken
- 1/4 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup sliced black olives
- 1/4 cup chopped fresh cilantro
- 1/4 cup sour cream
- 1/4 cup salsa
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Place one flour tortilla in the skillet and sprinkle half of the shredded cheddar cheese evenly over the tortilla.
- Add half of the cooked and shredded chicken, diced tomatoes, diced red onion, sliced black olives, and chopped fresh cilantro on top of the cheese.
- Place the second flour tortilla on top and press down gently to seal the quesadilla.
- Cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Repeat the process with the remaining ingredients to make the second quesadilla.
- Slice each quesadilla into wedges and serve with sour cream and salsa for dipping.
