Ingredients
- 1 lb boneless chicken breast, cut into cubes
- 1 cup pineapple chunks
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 cup teriyaki sauce
- 1/4 cup honey
- 1/4 cup soy sauce
- 1 tsp minced garlic
- 1 tsp grated ginger
- 1 cup cooked white rice
- 1/4 cup chopped green onions
- 1/4 cup sesame seeds
Instructions
- In a large bowl, combine 1/2 cup teriyaki sauce, 1/4 cup honey, 1/4 cup soy sauce, 1 tsp minced garlic, and 1 tsp grated ginger.
- Add the cubed chicken breast to the bowl and marinate for 20 minutes.
- In a large skillet, heat 2 tbsp of oil over medium-high heat.
- Add the marinated chicken and cook until browned and cooked through, about 8-10 minutes.
- Add the sliced red and green bell peppers to the skillet and cook for an additional 3-4 minutes, until slightly softened.
- Stir in the pineapple chunks and cook for 2-3 minutes, until heated through.
- Serve the chicken, peppers, and pineapple over a bed of cooked white rice.
- Drizzle with the remaining teriyaki sauce and sprinkle with chopped green onions and sesame seeds.
