Instructions

  • In a separate bowl, beat 1/2 cup of milk and 1 large egg. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  • Fold in 2 cups of corn kernels, 1/2 cup of green onions, and 1/4 cup of red bell pepper until evenly distributed.
  • In a large skillet, heat 1/4 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).
  • Drop spoonfuls of the corn mixture into the hot oil, flattening slightly with the back of the spoon. Cook for 2-3 minutes per side, or until golden brown and crispy.
  • Transfer the fritters to a paper towel-lined plate to drain excess oil. Serve hot and enjoy!
