Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/2 cup milk
- 1 large egg
- 2 cups fresh or frozen corn kernels
- 1/2 cup finely chopped green onions
- 1/4 cup finely chopped red bell pepper
- Vegetable oil for frying
Instructions
- In a large bowl, whisk together 1 cup of flour, 1 teaspoon of baking powder, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of cayenne pepper.
- In a separate bowl, beat 1/2 cup of milk and 1 large egg. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in 2 cups of corn kernels, 1/2 cup of green onions, and 1/4 cup of red bell pepper until evenly distributed.
- In a large skillet, heat 1/4 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).
- Drop spoonfuls of the corn mixture into the hot oil, flattening slightly with the back of the spoon. Cook for 2-3 minutes per side, or until golden brown and crispy.
- Transfer the fritters to a paper towel-lined plate to drain excess oil. Serve hot and enjoy!
