Coq au Riesling with Garlic Mashed Potatoes

Ingredients
- 4 chicken thighs
- 4 chicken drumsticks
- Salt and pepper to taste
- 2 tablespoons all-purpose flour
- 4 tablespoons unsalted butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup Riesling wine
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons fresh parsley, chopped
- 2 pounds potatoes, peeled and cubed
- 4 cloves garlic, minced
- 1/2 cup milk
- 1/4 cup unsalted butter
- Salt and pepper to taste
Instructions
- Season the chicken thighs and drumsticks with salt and pepper, then dredge in flour, shaking off any excess.
- In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken and cook until browned on all sides. Remove the chicken from the skillet and set aside.
- In the same skillet, melt the remaining 2 tablespoons of butter. Add the chopped onion and minced garlic, and cook until softened.
- Return the chicken to the skillet, then pour in the Riesling wine and chicken broth. Bring to a simmer, then cover and cook for 45 minutes, or until the chicken is cooked through.
- While the chicken is cooking, prepare the garlic mashed potatoes. Place the potatoes and minced garlic in a large pot, and cover with water. Bring to a boil and cook until the potatoes are tender. Drain well.
- Mash the potatoes with a potato masher or fork, then stir in the milk and butter. Season with salt and pepper to taste.
- Once the chicken is cooked, remove it from the skillet and keep warm. Stir the heavy cream into the skillet and simmer for 5 minutes, until the sauce thickens slightly.
- Serve the Coq au Riesling with the garlic mashed potatoes, and garnish with chopped parsley. Enjoy!
