Instructions

  • Season the chicken thighs and drumsticks with salt and pepper, then dredge in flour, shaking off any excess.
  • In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken and cook until browned on all sides. Remove the chicken from the skillet and set aside.
  • In the same skillet, melt the remaining 2 tablespoons of butter. Add the chopped onion and minced garlic, and cook until softened.
  • Return the chicken to the skillet, then pour in the Riesling wine and chicken broth. Bring to a simmer, then cover and cook for 45 minutes, or until the chicken is cooked through.
  • While the chicken is cooking, prepare the garlic mashed potatoes. Place the potatoes and minced garlic in a large pot, and cover with water. Bring to a boil and cook until the potatoes are tender. Drain well.
  • Mash the potatoes with a potato masher or fork, then stir in the milk and butter. Season with salt and pepper to taste.
  • Once the chicken is cooked, remove it from the skillet and keep warm. Stir the heavy cream into the skillet and simmer for 5 minutes, until the sauce thickens slightly.
  • Serve the Coq au Riesling with the garlic mashed potatoes, and garnish with chopped parsley. Enjoy!
