Ingredients
- 2 cups broken rice
- 1 pound pork shoulder, thinly sliced
- 4 eggs
- 1 cup pickled vegetables (carrots, daikon)
- 1/2 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup fried shallots
- 1/4 cup fish sauce
- 2 tablespoons sugar
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Rinse the broken rice under cold water until the water runs clear. Drain and set aside.
- In a small bowl, mix the fish sauce and sugar until the sugar is dissolved. Set aside.
- Season the pork slices with salt and pepper.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the pork slices and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, fry the eggs to your desired doneness. Remove from the skillet and set aside.
- In a pot, bring 4 cups of water to a boil. Add the rinsed broken rice and cook for 15-20 minutes, or until tender. Drain any excess water.
- To assemble the Com Tam, divide the cooked broken rice among 4 serving plates. Top each plate with the cooked pork slices, fried eggs, pickled vegetables, green onions, cilantro, and fried shallots.
- Drizzle the fish sauce mixture over each plate.
- Serve the Com Tam hot and enjoy!
