Instructions

  • In a small bowl, stir together the brewed coffee and instant espresso powder. Set aside to cool.
  • In a heatproof bowl, whisk together the egg yolks and granulated sugar. Place the bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water. Whisk constantly until the mixture is pale and thick, about 4-5 minutes. Remove from heat and let it cool slightly.
  • Add the mascarpone cheese to the egg yolk mixture and whisk until smooth.
  • In a separate bowl, whip the heavy cream, vanilla extract, and ground cinnamon until stiff peaks form.
  • Gently fold the whipped cream into the mascarpone mixture until fully combined.
  • Dip each ladyfinger into the coffee mixture for a few seconds, making sure not to soak them completely. Arrange a layer of dipped ladyfingers in the bottom of an 8x8 inch dish.
  • Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  • Cover and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld.
  • Before serving, dust the top with unsweetened cocoa powder and a sprinkle of ground cinnamon.
  • Slice and serve chilled. Enjoy!
