Ingredients
- 1 pound of large shrimp, peeled and deveined
- 1/2 cup of coconut milk
- 1/4 cup of lime juice
- 2 cloves of garlic, minced
- 1 tablespoon of fresh cilantro, chopped
- 1/2 teaspoon of red pepper flakes
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of coconut oil
Instructions
- In a bowl, combine 1/2 cup of coconut milk, 1/4 cup of lime juice, 2 cloves of minced garlic, 1 tablespoon of chopped cilantro, 1/2 teaspoon of red pepper flakes, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Add the peeled and deveined shrimp to the bowl and toss to coat. Let it marinate for 10 minutes.
- In a large skillet, heat 2 tablespoons of coconut oil over medium-high heat.
- Add the marinated shrimp to the skillet and cook for 2-3 minutes on each side, or until they turn pink and opaque.
- Serve the coconut lime shrimp hot, garnished with additional cilantro and lime wedges if desired.
