Coconut Almond Energy Bars

Ingredients
- 1 1/2 cups of rolled oats
- 1/2 cup of shredded coconut
- 1/2 cup of chopped almonds
- 1/4 cup of almond butter
- 1/4 cup of honey
- 1/4 cup of coconut oil
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of salt
Instructions
- Preheat the oven to 350 degrees F. Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, combine 1 1/2 cups of rolled oats, 1/2 cup of shredded coconut, and 1/2 cup of chopped almonds.
- In a small saucepan, heat 1/4 cup of almond butter, 1/4 cup of honey, and 1/4 cup of coconut oil over low heat, stirring until smooth.
- Remove from heat and stir in 1 teaspoon of vanilla extract and 1/4 teaspoon of salt.
- Pour the wet mixture over the dry ingredients and mix until well combined.
- Press the mixture firmly and evenly into the prepared baking pan.
- Bake for 20-25 minutes, or until the edges are golden brown.
- Allow the bars to cool completely in the pan before using the parchment paper to lift them out and cut into 12 bars.
- Store in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
