- 1 red bell pepper, diced
- 1 small red onion, diced

- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8 small flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1/4 cup sour cream
- 1 lime, cut into wedges
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced red bell pepper and red onion to the skillet and cook for 3-4 minutes, until softened.
- Add the black beans, corn, chili powder, cumin, paprika, salt, and black pepper to the skillet. Cook for an additional 2-3 minutes, stirring occasionally, until the mixture is heated through.
- Warm the flour tortillas in a separate skillet or in the microwave according to package instructions.
- To assemble the tacos, spoon the black bean and vegetable mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, cheddar cheese, and chopped cilantro.
- Serve the tacos with a dollop of sour cream and a lime wedge on the side.
