  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 450 degrees F.
  • Scrub the clams under cold running water to remove any dirt or sand. Discard any clams that are open or cracked.
  • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
  • Add the olive oil to the skillet with the bacon fat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  • Stir in the breadcrumbs and cook for 2-3 minutes until golden brown. Remove from heat and stir in the grated Parmesan cheese, chopped parsley, and cooked bacon. Season with salt and pepper to taste.
  • Place the clams on a baking sheet and top each clam with a spoonful of the breadcrumb mixture.
  • Pour the white wine over the clams and breadcrumb mixture.
  • Bake in the preheated oven for 8-10 minutes, or until the clams have opened and the breadcrumb topping is golden brown.
  • Serve hot with lemon wedges for squeezing over the clams.
