  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  • Preheat the oven to 425 degrees F.
  • Rinse the chicken and pat dry with paper towels. Place the chicken in a roasting pan.
  • In a small bowl, whisk together 2 tablespoons of olive oil, 2 teaspoons of salt, and 1 teaspoon of black pepper. Rub the mixture all over the chicken, including under the skin.
  • In another bowl, combine the juice and zest of 2 oranges and 2 lemons, 1/4 cup of honey, 4 cloves of minced garlic, 1 teaspoon of dried thyme, and 1 teaspoon of dried rosemary. Mix well.
  • Brush the citrus glaze all over the chicken, making sure to coat it evenly.
  • Roast the chicken in the preheated oven for 1 hour, or until the internal temperature reaches 165 degrees F, basting with the citrus glaze every 20 minutes.
  • Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
  • Serve the citrus glazed roasted chicken with the remaining glaze drizzled on top. Enjoy!
