Cinnamon Streusel Coffee Cake

Ingredients
- 2 cups of all-purpose flour
- 1 cup of white sugar
- 1/2 cup of brown sugar
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 cup of sour cream
- 1/2 cup of unsalted butter, melted
- 2 eggs
- 2 teaspoons of vanilla extract
- 1 tablespoon of ground cinnamon
- 1/2 cup of chopped pecans or walnuts (optional)
Instructions
- Preheat the oven to 350 degrees F. Grease and flour a 9x13 inch baking pan.
- In a medium bowl, mix together 1/2 cup of white sugar, 1/2 cup of brown sugar, 1 tablespoon of ground cinnamon, and 1/2 cup of chopped pecans or walnuts (if using). Set aside.
- In a large bowl, combine 2 cups of flour, 1/2 cup of white sugar, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
- In a separate bowl, whisk together 1 cup of sour cream, 1/2 cup of melted butter, 2 eggs, and 2 teaspoons of vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Spread half of the batter into the prepared pan. Sprinkle half of the cinnamon sugar mixture over the batter. Repeat with the remaining batter and cinnamon sugar mixture.
- Use a knife to swirl the cinnamon sugar mixture into the batter.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the coffee cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice and serve. Enjoy!
