Instructions
- Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together 2 cups of flour, 1/2 cup granulated sugar, 1/4 cup brown sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon ground cinnamon, and 1/4 teaspoon ground nutmeg.
- In a separate bowl, beat 2 eggs, then mix in 1/2 cup melted butter, 1/2 cup milk, and 1 teaspoon vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in 2 cups of diced apples.
- In another bowl, beat together 8 oz softened cream cheese, 1/4 cup powdered sugar, and 1 teaspoon vanilla extract until smooth.
