Ingredients
- 1 pound of shrimp, peeled and deveined
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- 1/4 cup of chopped fresh cilantro
- Juice of 2 limes
- 8 small flour or corn tortillas
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeno, seeded and finely chopped
- 1/4 cup of chopped fresh cilantro
- Juice of 1 lime
- Salt to taste
Instructions
- In a large bowl, combine the shrimp, olive oil, garlic, cumin, chili powder, salt, pepper, chopped cilantro, and lime juice. Toss to coat the shrimp evenly. Let it marinate for 10 minutes.
- While the shrimp is marinating, prepare the mango salsa by combining the diced mango, red onion, jalapeno, chopped cilantro, lime juice, and salt in a bowl. Mix well and set aside.
- Heat a large skillet over medium-high heat. Add the marinated shrimp to the skillet and cook for 2-3 minutes on each side, or until they are pink and opaque.
- Warm the tortillas in a separate skillet or in the microwave according to package instructions.
- To assemble the tacos, place a few shrimp on each tortilla and top with a spoonful of mango salsa.
