  • 1 pound of shrimp, peeled and deveined
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • 1/4 cup of chopped fresh cilantro
  • Juice of 2 limes
  • 8 small flour or corn tortillas
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeno, seeded and finely chopped
  • 1/4 cup of chopped fresh cilantro
  • Juice of 1 lime
  • Salt to taste

Instructions

  • In a large bowl, combine the shrimp, olive oil, garlic, cumin, chili powder, salt, pepper, chopped cilantro, and lime juice. Toss to coat the shrimp evenly. Let it marinate for 10 minutes.
  • While the shrimp is marinating, prepare the mango salsa by combining the diced mango, red onion, jalapeno, chopped cilantro, lime juice, and salt in a bowl. Mix well and set aside.
  • Heat a large skillet over medium-high heat. Add the marinated shrimp to the skillet and cook for 2-3 minutes on each side, or until they are pink and opaque.
  • Warm the tortillas in a separate skillet or in the microwave according to package instructions.
  • To assemble the tacos, place a few shrimp on each tortilla and top with a spoonful of mango salsa.
