  • 1 pound of large shrimp, peeled and deveined
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of cumin
  • Salt and pepper to taste
  • 1/4 cup of chopped fresh cilantro
  • Juice of 2 limes
  • 8 small flour or corn tortillas
  • 1 ripe mango, julienned
  • 1/2 small red onion, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 1/4 cup of chopped fresh cilantro
  • Juice of 1 lime
  • 2 tablespoons of honey
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine the shrimp, olive oil, garlic, chili powder, cumin, salt, pepper, chopped cilantro, and lime juice. Toss to coat the shrimp evenly. Let marinate for 10 minutes.
  • In a separate bowl, combine the julienned mango, sliced red onion, sliced red bell pepper, chopped cilantro, lime juice, honey, salt, and pepper. Toss to combine and set aside to let the flavors meld.
  • Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes per side, or until they are pink and opaque. Remove from heat.
  • Warm the tortillas in a dry skillet or in the microwave for 30 seconds.
  • To assemble the tacos, place a few shrimp on each tortilla and top with the mango slaw. Serve immediately and enjoy!
