Instructions

  • In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons lime juice, 1 teaspoon lime zest, 1/4 cup chopped cilantro, 3 cloves minced garlic, 1/2 teaspoon cumin, 1/2 teaspoon paprika, and salt and pepper to taste.
  • Place the peeled and deveined shrimp in a large resealable plastic bag and pour the marinade over the shrimp. Seal the bag and refrigerate for at least 30 minutes to marinate.
  • Preheat the grill to medium-high heat and lightly oil the grate.
  • Remove the shrimp from the marinade and thread onto skewers. Discard the remaining marinade.
  • Grill the shrimp for 2-3 minutes on each side, or until they are pink and opaque.
