  • 2 boneless, skinless chicken breasts
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 1 tablespoon olive oil

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 1 tablespoon olive oil

Instructions

  • In a small bowl, mix together the chopped cilantro, lime juice, cumin, chili powder, salt, and black pepper to create a marinade.
  • Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 30 minutes.
  • Heat a grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest for 5 minutes before slicing into thin strips.
  • Lay out the flour tortillas and sprinkle 1/2 cup of shredded cheese on one half of each tortilla. Divide the sliced chicken and place it on top of the cheese. Sprinkle an additional 1/4 cup of cheese over the chicken on each tortilla. Fold the tortillas in half to cover the filling.
  • In a large skillet, heat the olive oil over medium heat. Place the filled tortillas in the skillet and cook for 3-4 minutes on each side, or until golden brown and the cheese is melted.
  • Remove the quesadillas from the skillet and let them cool for a minute before slicing into wedges. Serve with your favorite toppings such as salsa, sour cream, or guacamole. Enjoy!
