Ingredients
- 8 oz chorizo sausage
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 jalapeno, seeded and diced
- 1 tomato, diced
- 12 oz Oaxaca cheese, shredded
- 1/4 cup fresh cilantro, chopped
- Tortilla chips, for serving
Instructions
- In a large skillet, cook 8 oz of chorizo sausage over medium heat, breaking it up with a spoon, for about 5 minutes or until fully cooked.
- Add 1 small diced onion, 2 minced cloves of garlic, and 1 diced jalapeno to the skillet. Cook for an additional 3-4 minutes until the vegetables are softened.
- Stir in 1 diced tomato and cook for 2 minutes.
- Reduce the heat to low and sprinkle 12 oz of shredded Oaxaca cheese over the chorizo mixture. Stir until the cheese is melted and well combined with the chorizo and vegetables.
- Sprinkle 1/4 cup of chopped fresh cilantro over the top.
- Serve the chorizo queso fundido immediately with tortilla chips for dipping.
