  • Add 2 medium diced potatoes to the skillet and cook until they are tender and slightly crispy, about 10 minutes.
  • Stir in 1/2 diced onion, 1 minced clove of garlic, 1 tsp cumin, 1/2 tsp chili powder, and salt and pepper to taste. Cook for an additional 2-3 minutes until the onions are softened.
  • In a separate skillet, warm 8 small corn tortillas over medium heat until they are soft and pliable, about 1 minute per side.
