  • Preheat the grill to medium-high heat.
  • Grill the chorizo sausages for 6-8 minutes, turning occasionally, until they are cooked through and have nice grill marks.
  • While the sausages are grilling, slice the crusty bread rolls in half lengthwise.
  • Once the sausages are done, remove them from the grill and let them rest for a few minutes.
  • Place the bread rolls on the grill, cut side down, and toast for 1-2 minutes until they are lightly golden brown.
  • To assemble the choripán, place a grilled chorizo sausage in each toasted bread roll and top with a generous amount of chimichurri sauce.
