Ingredients
- 1 cup heavy cream
- 8 ounces mascarpone cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup brewed espresso, cooled
- 1/4 cup coffee liqueur
- 24 ladyfinger cookies
- 1/4 cup unsweetened cocoa powder
- 1/4 cup sliced almonds, toasted
Instructions
- In a large mixing bowl, beat 1 cup of heavy cream until stiff peaks form.
- In another bowl, whisk together 8 ounces of mascarpone cheese, 1/2 cup of powdered sugar, and 1 teaspoon of vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- In a shallow dish, combine 1/2 cup of brewed espresso and 1/4 cup of coffee liqueur.
- Quickly dip each ladyfinger into the espresso mixture, making sure not to soak them, and arrange them in the bottom of a 9x9 inch serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
- Cover and refrigerate for at least 2 hours, or overnight, to allow the flavors to meld.
- Before serving, dust the top with 1/4 cup of unsweetened cocoa powder and sprinkle with 1/4 cup of toasted sliced almonds.
- Slice and serve chilled. Enjoy!
