Created by: Howcan Team
Ingredients
- 1 and 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 and 3/4 cups granulated sugar
- 1 and 1/2 teaspoons baking powder
- 1 and 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons pure vanilla extract
- 1 cup boiling water
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 2 cups confectioners' sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup heavy cream
- 8 ounces semisweet chocolate, chopped
- 1/2 cup heavy cream
- 2 tablespoons unsalted butter
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a large bowl, sift together 1 and 3/4 cups of flour, 3/4 cup of cocoa powder, 1 and 3/4 cups of granulated sugar, 1 and 1/2 teaspoons of baking powder, 1 and 1/2 teaspoons of baking soda, and 1 teaspoon of salt.
- Add 2 eggs, 1 cup of milk, 1/2 cup of vegetable oil, and 2 teaspoons of vanilla extract to the dry ingredients. Mix until well combined.
- Stir in 1 cup of boiling water. The batter will be thin, but that's okay.
- Fill each cupcake liner about 2/3 full with the batter. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely before filling and frosting.
- To make the peanut butter frosting, beat 1 cup of creamy peanut butter and 1/2 cup of softened unsalted butter together until smooth. Gradually add in 2 cups of confectioners' sugar, beating well after each addition. Stir in 1 teaspoon of vanilla extract. Add 1/4 cup of heavy cream and beat until the frosting is light and fluffy.
- To make the chocolate ganache filling, place 8 ounces of chopped semisweet chocolate in a heatproof bowl. In a small saucepan, heat 1/2 cup of heavy cream until it just begins to simmer. Pour the hot cream over the chocolate and let it sit for 1 minute. Add 2 tablespoons of unsalted butter and stir until the ganache is smooth and glossy. Allow it to cool slightly before filling the cupcakes.
- Using a small knife or a cupcake corer, carefully remove the center of each cupcake. Fill the cavities with the chocolate ganache.
- Pipe or spread the peanut butter frosting onto the cupcakes. Enjoy!
