Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tbsp chipotle peppers in adobo sauce, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 8 small flour tortillas
- 1 mango, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno, seeded and minced
- 1 lime, juiced
- Salt to taste
Instructions
- In a medium bowl, combine the shrimp, minced chipotle peppers, cumin, chili powder, salt, and black pepper. Toss to coat the shrimp evenly.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until they are pink and opaque. Remove from the skillet and set aside.
- In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the flour tortillas, one at a time, and cook for 1-2 minutes on each side until they are lightly browned and heated through. Remove from the skillet and keep warm.
- In a separate bowl, combine the diced mango, chopped red onion, minced jalapeno, and chopped cilantro. Squeeze the lime juice over the mixture and toss to combine. Season with salt to taste.
