Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp chipotle peppers in adobo sauce, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 8 small flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream
  • 1 lime, cut into wedges

Instructions

  • In a medium bowl, combine the shrimp, minced chipotle peppers, cumin, chili powder, garlic powder, and salt. Toss to coat the shrimp evenly.
  • Heat the olive oil in a large skillet over medium-high heat. Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side, or until they are pink and opaque.
  • Warm the flour tortillas in a separate skillet over medium heat for about 30 seconds on each side.
  • To assemble the tacos, place a few shrimp on each tortilla. Top with shredded lettuce, diced tomatoes, and chopped cilantro. Drizzle with sour cream and serve with lime wedges on the side.
