Instructions

  • In a large pot, heat the chili oil over medium heat. Add the garlic, onion, and Sichuan peppercorns. Cook until fragrant, about 2 minutes.
  • Add the beef brisket slices and cook until browned, about 5 minutes.
  • Pour in the beef broth, soy sauce, oyster sauce, and sugar. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until the beef is tender.
  • While the beef is simmering, cook the Chinese wheat noodles according to the package instructions. Drain and set aside.
  • Once the beef is tender, season the soup with salt and black pepper to taste.
  • To serve, divide the cooked noodles into bowls and ladle the beef and broth over the noodles.
  • Garnish with chopped green onions and drizzle with additional chili oil if desired.
