  • 8 oz mushrooms, sliced

Instructions

  • Form the chickpea mixture into 4 burger patties and place them on a plate. Refrigerate for 10-15 minutes to firm up.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes. Remove the onions from the skillet and set aside.
  • In the same skillet, add another tablespoon of olive oil and sauté the sliced mushrooms until they are golden brown and tender, about 5-7 minutes. Remove the mushrooms from the skillet and set aside.
  • Using the same skillet, cook the chickpea patties over medium heat for 4-5 minutes on each side, or until they are golden brown and heated through.
  • Assemble the burgers by placing the chickpea patties on the burger buns, then topping with the caramelized onions, sautéed mushrooms, lettuce, tomato, and any other desired toppings.
