Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 8 oz mushrooms, sliced
- 4 burger buns
- Lettuce, tomato, and any other desired toppings
Instructions
- In a food processor, combine 1 can of chickpeas, 1/2 cup breadcrumbs, 1/4 cup grated Parmesan cheese, 1/4 cup chopped fresh parsley, 1 teaspoon cumin, 1/2 teaspoon paprika, and salt and pepper to taste. Pulse until well combined.
- Form the chickpea mixture into 4 burger patties and place them on a plate. Refrigerate for 10-15 minutes to firm up.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes. Remove the onions from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil and sauté the sliced mushrooms until they are golden brown and tender, about 5-7 minutes. Remove the mushrooms from the skillet and set aside.
- Using the same skillet, cook the chickpea patties over medium heat for 4-5 minutes on each side, or until they are golden brown and heated through.
- Assemble the burgers by placing the chickpea patties on the burger buns, then topping with the caramelized onions, sautéed mushrooms, lettuce, tomato, and any other desired toppings.
- Serve the chickpea burgers immediately and enjoy!
