  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 avocado, diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1/4 cup tortilla strips
  • 1 lime, cut into wedges
  • 1 teaspoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1/4 cup tortilla strips
  • 1 lime, cut into wedges
  • 1 teaspoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  • In a small bowl, mix the olive oil, chili powder, cumin, garlic powder, salt, and pepper. Rub the mixture onto the cooked and shredded chicken breasts.
  • In a large salad bowl, combine the romaine lettuce, cherry tomatoes, black beans, corn, red onion, and cilantro.
