Chicken Stir Fry

Ingredients
- 1 lb boneless, skinless chicken breast, sliced into thin strips
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/2 cup chicken broth
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 2 green onions, sliced
- Cooked rice or noodles for serving
Instructions
- In a small bowl, mix 2 tablespoons of soy sauce with 1 tablespoon of cornstarch. Add the sliced chicken and toss to coat. Set aside to marinate for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated chicken and stir-fry for 3-4 minutes, or until cooked through. Remove the chicken from the skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced red and yellow bell peppers, broccoli, and snap peas. Stir-fry for 2-3 minutes, or until the vegetables are crisp-tender.
- Add the minced garlic and grated ginger to the skillet and stir-fry for 1 minute, or until fragrant.
- Pour in 1/2 cup of chicken broth, 2 tablespoons of oyster sauce, 1 tablespoon of hoisin sauce, and 1 teaspoon of sesame oil. Stir to combine and bring to a simmer.
- Return the cooked chicken to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes, or until everything is heated through.
- Sprinkle with sliced green onions and serve the chicken stir fry over cooked rice or noodles. Enjoy!
