  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 cup chicken broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • Cooked rice or noodles for serving

  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce

Instructions

  • In a small bowl, mix 2 tablespoons of soy sauce with 1 tablespoon of cornstarch. Add the sliced chicken and toss to coat. Set aside to marinate for 10 minutes.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated chicken and stir-fry for 3-4 minutes, or until cooked through. Remove the chicken from the skillet and set aside.
  • Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced red and yellow bell peppers, broccoli, and snap peas. Stir-fry for 2-3 minutes, or until the vegetables are crisp-tender.
  • Add the minced garlic and grated ginger to the skillet and stir-fry for 1 minute, or until fragrant.
  • Pour in 1/2 cup of chicken broth, 2 tablespoons of oyster sauce, 1 tablespoon of hoisin sauce, and 1 teaspoon of sesame oil. Stir to combine and bring to a simmer.
  • Return the cooked chicken to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes, or until everything is heated through.
  • Sprinkle with sliced green onions and serve the chicken stir fry over cooked rice or noodles. Enjoy!
