Ingredients
- 1 lb boneless, skinless chicken thighs
- 1/4 cup plain yogurt
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 cups cooked basmati rice
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup diced cucumbers
- 1/4 cup diced red onions
- Tahini sauce or garlic sauce for serving
- Pita bread or flatbread for serving
Instructions
- In a bowl, mix together 1/4 cup yogurt, 2 tablespoons olive oil, minced garlic, 1 teaspoon cumin, 1 teaspoon paprika, 1/2 teaspoon turmeric, 1/2 teaspoon cinnamon, 1/4 teaspoon cayenne pepper, and salt and pepper to taste.
- Add the chicken thighs to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes on each side, or until fully cooked and slightly charred. Remove from heat and let rest for a few minutes before slicing into strips.
- To assemble the shawarma plate, divide the cooked basmati rice among 4 plates. Top with shredded lettuce, diced tomatoes, cucumbers, and red onions.
- Add the sliced chicken on top of the rice and vegetables. Serve with tahini sauce or garlic sauce and pita bread or flatbread on the side.
