Chicken Shawarma

Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1/4 cup plain yogurt
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp paprika
- 1 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
- Pita bread, for serving
- Sliced tomatoes, cucumbers, and onions, for serving
- Tahini or garlic sauce, for serving
Instructions
- In a bowl, mix 1/4 cup plain yogurt, 3 cloves minced garlic, 2 tsp ground cumin, 2 tsp paprika, 1 tsp ground turmeric, 1/2 tsp ground cinnamon, 1/4 tsp cayenne pepper, 2 tbsp lemon juice, 2 tbsp olive oil, and salt and pepper to taste.
- Cut 1.5 lbs of boneless, skinless chicken thighs into thin strips and add them to the marinade. Toss to coat the chicken evenly. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken strips onto skewers and grill for 6-8 minutes on each side, or until fully cooked and slightly charred.
- Remove the chicken from the skewers and let it rest for a few minutes. Warm the pita bread on the grill for a minute on each side.
- To serve, place a few slices of grilled chicken onto a piece of warm pita bread. Add sliced tomatoes, cucumbers, and onions. Drizzle with tahini or garlic sauce.
