  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Pita bread, for serving
  • Sliced tomatoes, cucumbers, and onions, for serving

  • Sliced tomatoes, cucumbers, and onions, for serving
  • Tahini or garlic sauce, for serving

Instructions

  • In a bowl, mix 1/4 cup plain yogurt, 3 cloves minced garlic, 2 tsp ground cumin, 2 tsp paprika, 1 tsp ground turmeric, 1/2 tsp ground cinnamon, 1/4 tsp cayenne pepper, 2 tbsp lemon juice, 2 tbsp olive oil, and salt and pepper to taste.
  • Cut 1.5 lbs of boneless, skinless chicken thighs into thin strips and add them to the marinade. Toss to coat the chicken evenly. Cover and refrigerate for at least 1 hour, or overnight for best results.
  • Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken strips onto skewers and grill for 6-8 minutes on each side, or until fully cooked and slightly charred.
  • Remove the chicken from the skewers and let it rest for a few minutes. Warm the pita bread on the grill for a minute on each side.
  • To serve, place a few slices of grilled chicken onto a piece of warm pita bread. Add sliced tomatoes, cucumbers, and onions. Drizzle with tahini or garlic sauce.
  • Roll up the pita bread and enjoy your delicious homemade chicken shawarma!
